Delicious gingerbread bites recipe

I don’t know about you but I am a sucker for gingerbread flavoured (and even scented) items. My favourite hot chocolate is a gingerbread flavour that I love, and I curl up with it every Christmas and winter time to enjoy. These make a great addition to the tradition.

This recipe takes 10 minutes to prep and 15 minutes to cook, and makes 30 gingerbread bites.

Gingerbread bites ingredients

To create 30 gingerbread bites you will need:

  • 2 cups dark brown sugar
  • 1 cup molasses
  • 2 teaspoons ginger
  • 3 teaspoons cinnamon
  • 2 teaspoon clove
  • 1½ sticks of butter
  • 1 egg
  • 2 teaspoons baking soda
  • 3 cups of flour
  • 1 tablespoon olive oil
  • Sprinkles for decoration

Method

Start off by preheating your oven to 220C.

Mix molasses, dark brown sugar, and spices in the bowl of a mixer with paddle attachment.

Add in the stick and a half of butter and mix for about 1 minute.

Add in flour and baking soda and while mixing add one egg.

Oil a 9×9 pan.

Press dough into the pan with hands evenly.

Bake for 15 to 17 minutes until a toothpick comes out clean.

Top with sprinkles if you’d like.

Let cool and remove from pan.

Cut into 30 bite size pieces.
