When you’re free from gluten you can sometimes feel like you miss out on delicious treats which haven’t been made in a gluten free way. Everyone should be able to enjoy a slice of delicious cake on their birthday day which is why we have the perfect gluten free birthday cake recipe for you.

Free From But Delicious

This birthday cake recipe isn’t only gluten free, it’s also vegan! Free from eggs, dairy wheat and nuts so perfect for a number of specific diets whilst still be delicious and ideal for celebrations. So what ingredients do we need for this gluten free birthday cake recipe?

What You Need

Cake Ingredients

  • 1 large avocado
  • 400ml unsweetened soya milk
  • 350g gluten free plain flour
  • 300g light muscovado sugar
  • 150ml vegetable oil
  • 50g cocoa powder
  • 2 tsp gluten free baking powder
  • 2 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • Pinch of salt
  • Some dairy free sunflower spread greasing your tins

Frosting Ingredients

  • 200g dairy free chocolate (70-80% cocoa)
  • 200g icing sugar
  • 125ml unsweetened soya milk
  • 85g dairy free sunflower spread
  • 85g mashed avocado
  • 25g cocoa powder
  • 1 tsp vanilla extract

Let’s Make It

  1. Preheat your oven to 160°C
  2. Grease two 20cm tins with your dairy free spread and line with parchment
  3. Mix together your avocado flesh and sugar until smooth
  4. Add the flour, cocoa powder, bicarbonate of soda, baking powder, soya milk, vanilla extract, vegetable oil and pinch of salt and mix until becomes a smooth batter
  5. Pour equally into your two tins and pop in the oven for 25 minutes
  6. Check after 20 minutes with an inserted skewer, if it comes out clean, you’re good
  7. Leave to cool for a few minutes in the tins before turning out onto a wire rack
  8. For your frosting, mix the avocado and sunflower spread together until smooth, using electric beaters
  9. Heat the soya milk in a pan, melt the chocolate in a bowl over the top of this
  10. Sift your cocoa powder into a large bowl and once the milk has simmered, beat it into the cocoa until smooth
  11. Add your melted chocolate, avocado mix, icing sugar, vanilla extract and mix until it becomes a beautiful shiny and thick frosting
  12. You can now use this to sandwich your two cooled cakes together and spread over the top too
  13. Pop on a vintage looking plate for extra special presentation and cut a big slice to enjoy

Top It Off

If you want to add some toppings to your cake, you could use sprinkles. Just make sure they are specifically vegan and gluten free ones. You could perhaps add raspberries or other fruit in a pleasant formation. Maybe you bought extra chocolate? Smash it up with a rolling pin and sprinkle over the top! Don’t forget to add some candles for the birthday boy or girl!
