You can’t beat the addition of Yorkshire puddings on your plate at meal time. Traditionally they’re seen with a Sunday dinner but you can have them midweek, with whatever you fancy and even as a dessert! There are different recipes tailored to the amount of people you’re cooking for, but what is the best Yorkshire pudding recipe for 2 people? Here it is.

Where did the Yorkshire pudding come from?

The history of the Yorkshire pudding is a spectacular one. The first recorded recipe appeared almost 300 years ago in a book called The Whole Duty Of A Woman. This 1737 recipe was listed as A Dripping Pudding with the dripping coming from spit roast meat.

“Make a good batter as for pancakes, put it in a hot toss-pan over the fire with a bit of butter to fry the bottom a little, then put the pan and batter under a shoulder of mutton instead of a dripping pan, frequently shaking it by the handle and it will be light and savoury, and fit to take up when your mutton is enough; then turn it in a dish, and serve it hot.”

The best Yorkshire pudding recipe for 2

If you aren’t having a mystery shop for your Sunday roast then the next best is to make your own.

For our Yorkshire pudding recipe for 2 you need the following things.

  • Yorkshire pudding tray – we love this one
  • 4 tbsp plain flour
  • 1 egg
  • 4 tbsp milk (you can use homemade oat milk if you like. Not only is it a great dairy alternative, but it is really cheap and easy to make.)
  • 4 tbsp water
  • A pinch of salt
  • Oil or fat

Of course, you can change the recipe if you need to cater for more people.

For four people, double the amount of ingredients.

For eight people, double it again, etc.

To make your Yorkshire puddings, follow these easy steps:

  1. Grab a mixing bowl and sieve your flour into it, adding the pinch of salt once you have.
  2. Put your egg, milk and water in a jug and mix. Then add the flour.
  3. Mix this well before leaving your mixture to stand for an hour or so.
  4. Whilst this is standing, heat your oven to gas mark 8 or 230ºc.
  5. When it’s hot, take your bun tin and add half a teaspoon of oil or fat to each section. Return it to the oven until the oil/fat gets hot. I like to make sure it is really, really hot and I usually give it a good 30 minutes.
  6. Now add your mixture and cook for 15-20 minutes. If you’re using a larger bun tin you’ll need to leave them to cook for 30 minutes or so.
  7. Keep an eye on them through the oven glass and serve hot.

Add a scoop of vanilla ice cream on top of your Yorkshire puddings, before with drizzling syrup or scattering bashed up honeycomb over the top. Take a supermarket berry mixture (or whatever you have found at the supermarket reduction shelf) and spoon into your Yorkshire pudding before covering with warm custard. You can even use them to make your own profiteroles!

Depending on which milk you use, and how much oil you use, you can look at between 76-96 calories per Yorkshire pudding following this recipe.

You know that saying that a Sunday well spent brin You know that saying that a Sunday well spent brings a week of content?

That’s been our whole entire day today! Lots going on this week in our personal lives, business (deliveries, checking in with web developers about our biggest project to date) and health stuff (hospital first thing tomorrow for me 😩) so today we have spent the day having a deep clean, declutter session, getting odd jobs done and even boiling eggs for easy snacks this week. I’m nothing if not thorough.

It means getting to spend some nice chilled out time reading a book, drinking some biscuit flavoured tea and winding down.

And improve my health it did! I have reversed my diabetes and discovered I have cancer.

My journey wasn’t straight forward - I’m not where I want to be but I’m well on my way 💪🏻

Weight loss surgery is a tool and it doesn’t fix your brain. It doesn’t fix a life time of emotional eating. But it helps along the journey 💪🏻

I keep being asked for an update but I feel like there isn’t much to say. I still struggle to eat nectarines and pears. Hitting my daily protein goals is hard work. I’ve lost a lot of my hair but I like it. I am getting stuck in the same 5lb bracket where my weight is hovering,  but I don’t feel as though I have the mental strength to push through right now. If you’ve seen my stories recently then you’ll know that I’m in a very bad place mentally right now.

Did these little jars save me from a serious head funk?

Why yes they did!

Let me explain. I've got a lot of ideas and projects on to go. Looking at my to do lists is OVERWHELMING. What do I do instead? Nothing!

Mental health and The Overwhelm had got to me. There was no 'new year, new me' this year. There was 'new year, same depressed me under a cloud of darkness who isn't getting things done'.

Until my business mentor stepped in and we came up with this strategy to make jars for some of my projects, and write out tasks to do for those projects.

Now instead of looking at a to do list, getting overwhelmed and doing nothing I have some pretty jars to pull a task out from. Okay, it isn't perfect - sometimes I pull something out that needs another task doing first so I just pop it back inside and pick out another one.

If you are struggling then I would really recommend this technique! It got me out of a funk.
